4 Recipes for Creating Gourmet Popcorn

You love traditional popcorn, of course. Yet, there’s something intriguing about how popcorn is a canvas for flavor. You may have even tried some different gourmet popcorn recipes. But did you know you can make flavored popcorn in your kettle? With the right products and proper instructions, you will be able to create sweet flavors as you pop!

Gold Medal's Glaze Pop popcorn coating mix on shelf

1. Glaze Pop®

The pioneer of sweet popcorn, Glaze Pop was created as a mix to add straight in the kettle with your corn and oil. Glaze Pop comes in a variety of flavors including caramel, cherry, blue raspberry, grape, chocolate, cinnamon, and more.

To make in an 8-oz kettle, first simply heat up your kettle for 5 minutes. Add in your corn and oil. (If you are using a Popcorn/Salt/Oil kit, make sure to remove all the salt first. You only want to pour in the corn and oil.) Next, pour in 4-oz of Glaze Pop. Then close the kettle lid and allow corn to pop. When rapid popping stops, dump the popcorn out of the kettle.

You’ll love how easy it is to use Glaze Pop!

2. Signature Blends™

Signature Blends are blends or glazes that can be used for a wide range of products. For popcorn, they are most often used in a cooker mixer to produce vivid colors and flavors. Enjoy black cherry, blueberry, birthday cake, watermelon, vanilla, and many more. Signature Blends also come in flavor-only or color-only applications.

The secret to using Signature Blends in the kettle can be found in the key ingredient, Compound S (Item #2320). When popping with sugar, you risk build-up which can cause burning. Compound S not only helps you to produce better-tasting popcorn it also keeps your kettle cleaner.

Gold Medal's flavor department developed this recipe for using Signature Blends in a 16 oz kettle.

4. Toppings and Mix-Ins

Another way to dress up your popcorn is to add toppings or mix-ins. You can really get creative! Drizzle on melted chocolate or white chocolate over popped popcorn for a fun and tasty treat. Try out different mix-ins including chocolate candies (make sure popcorn has cooled first so it doesn’t melt), chewy or gummy candies, nuts, dried fruits, cereal, or crumbled cookies to make your own signature recipes. For example, to make a trail mix variety use candy-coated chocolate pieces, raisins, macadamia nuts, salted almonds, and banana chips. Gourmet popcorn is a best seller because it is so versatile.
