Peanut Brittle

 

Ready to switch things up a little bit?  Expand your menu with this quick and easy peanut brittle recipe.

Ingredients

  • 1 tsp baking soda
  • 1 teaspoon water
  • 1 tsp vanilla
  • 1.5 cups sugar
  • 1 cup water
  • 1 cup corn syrup
  • 3 TBS butter
  • 1 LB raw peanuts

Directions

  • Put #2721 Parchment Paper on #2720 Fudge pan and set aside. Mix 1 tsp baking soda, 1 teaspoon water and the 1 tsp vanilla; reserve.
  • Mix 1.5 cups sugar, 1 cup water and 1 cup corn syrup in Pralinator. Cook on Heat/Motor up to 240 degrees F (you will have to adjust your temp settings) on candy thermometer or until small amount of syrup dropped into very cold water forms a soft ball that flattens when removed from water. Be patient, this takes a while.
  • Stir in 3 TBS butter and 1 LB raw peanuts. Cook, stirring constantly, to 300 degrees F or until small amount of mixture dropped into very cold water separates into hard, brittle threads. (Watch carefully so mixture does not burn.) Turn off Heat and switch to Motor Only. Quickly stir in baking soda mixture until light and foamy.
  • Pour into fudge pan; quickly spread about 1/2 inch thick. Cool completely, at least 1 hour. Break into pieces. Store in covered container.
